Country Meat Loaf Sandwiches

1 Tablespoon olive oil

1 medium onion, finely chopped

1 green pepper, finely chopped

1 red pepper, finely chopped

1 clove garlic, minced

1/2 teaspoon each dried basil, and thyme

1 egg

1 pound lean ground beef

1/2 pound lean ground veal or pork

1/2 cup rolled oats

1/4 cup mozzarella cut in 1/4" cubes

1/4 cup grated Parmesan

1/2 teaspoon salt

1/8 teaspoon pepper

1/4 cup ketchup

2 loaves crusty Italian bread, split lengthwise

Preheat oven to 350 degrees F.

Heat oil in skillet for 1 minute over moderate heat.

Add onion and saute for 3 minutes. Add green and red peppers, garlic, basil and thyme.

Saute, stirring occasionally, for 5 minutes, or until vegetables are limp. Set aside.

Beat egg in large bowl until frothy.

Add beef, veal, oats, mozzarella, Parmesan, salt, pepper, and the skillet mixture.

Mix well with hands, then pat into lightly greased 9"x5"x3" loaf pan.

Bake, uncovered, 25 minutes.

Remove pan from oven and brush top with ketchup. Return to oven and bake, uncovered, for 25 minutes more, or until loaf is no longer pink on inside.

Let stand 10 minutes then cut in 1/4" slices. Arrange along the bottom half of each loaf of bread, and cover with the tops. Cut each loaf in to 4 pieces. Serves 8.
