Curried Rice and Beef

2 Tablespoons vegetable oil

2 onions, chopped

2 cloves garlic, crushed

1 pound ground beef

2 Tablespoons curry powder

1 teaspoon ground coriander

1 teaspoon cumin

1 - 10 ounce can tomato soup

2 cups water

1 1/2 cups Minute Rice

1/2 cup sour cream (optional)

Heat oil in large saucepan or frying pan.

Add the ground beef, the onion and the garlic. Add the seasonings.

Cook until done and all traces of pink are gone from meat.

Pour in the soup and the water.

Bring to a boil quickly then turn heat down to a simmer, covered, for 5 minutes.

Add the rice. Make sure the mixture is hot enough to bubble very gently. Cover and cook about 5 minutes on a simmer.

Remove from heat and let sit for 3 to 5 minutes more. Serve, topping with sour cream if you like.
