1 small onion, chopped
4 tsp. curry powder
1/2 tsp. salt
1 cup uncooked rice
1/2 cup raisins
2 cups water
2 cups shredded cooked chicken
2 cups frozen peas and carrots, thawed
In a large, deep skillet, heat 2 Tbs. butter over medium heat.
Add onion and curry powder; cook until softened, 3 to 4 minutes.
Add 1/2 tsp. salt, rice, raisins, and 2 cups water. Stir.
Reduce heat to medium-low;cover. Cook 20 minutes.
Stir in chicken and vegetables; heat through, 5 minutes.
