Chicken Lo-Mein

Heat oil over medium high heat.

Add 2 T. minced fresh ginger and 1 clove garlic, minced. Cook 2 minutes.

Add 1 lb. frozen vegetables

2 cups water

2 - 3 oz. packages ramen noodles ( 1 flavor packet only)

1 T. soy sauce.

Cover. Cook until liquid is almost absorbed, 5 minutes.

Add 2 cups cooked chicken and 2 sliced green onions. Heat.
