3/4 cup or less of butter
2 cups heavy cream
1 and 1/2 cups Parmesan cheese, finely grated
salt and pepper to taste
3 - 4 cups fettucine or linguine
4 chicken breasts, cut up into pieces
Cook pasta, drain well.
Dip small pieces of chicken into seasoned flour, then fry.
Preheat oven to 350.
Melt butter in a saucepan over low heat. Off the heat, slowly add cream and grated Parmesan to the butter.
Put back on heat, to warm sauce and melt the cheese. Do not boil.
Stir in salt and pepper. Add the cooked chicken.
Combine the pasta and the sauce together.
Put into a 9 x 12 baking pan. Cover with tin foil. Bake 30 minutes.
Remove from oven, and top with grated Parmesan. Return to oven, until cheese is melted.
