Carrot Pudding Recipe

1 cup chopped suet

1 cup raisins

1 cup currants

1 cup grated carrot

1 cup grated potato

1 cup sugar (brown or white)

2 cups flour

1 teaspoon baking soda

1 teaspoon salt


Mix first 5 ingredients.

Add sugar. Blend.

Mix flour, baking soda, and salt.

Combine all ingredients.


Turn into greased pan.

Cover with foil.

Steam 2 ½ hours.

Brown Sugar Sauce

Melt in saucepan

2 Tablespoons butter

Add

2 Tablespoons flour

¼ teaspoon salt

Stir until smooth.


Add ½ cup brown sugar

Blend thoroughly and cook over medium heat, stirring constantly, until mixture bubbles and is lightly browned (about 5 minutes)

Remove from heat.

Blend in

1 cup boiling water

Return to heat and bring to a boil, stirring constantly, until smooth and thickened.

Add 1 teaspoon vanilla

Serve hot on steamed or baked puddings.

Yield: 1 ¼ cups
